The deliciousness offered for this celebratory buffet feast includes Breakfast Entrees of Scrambled Eggs, Eggs Benedict, Bacon and Sausages, French Toast Sticks, Cheese Blintz, and Fresh Juices and Smoothies will be poured. There are also Pancakes and Waffles with sweet toppings and an Omelet Station with savory filling choices. The Soup for the holiday is English Pea, and there’s an array of oven and hearth leavened Breads. Cured Meats and International and Domestic Cheeses are offered, and there’s Chilled Seafood and Sushi, including king crab, crab claws, poached shrimp, oysters and ceviche. For salad lovers, choices are Pasta Salad with asparagus, artichoke and kalamata olives; Potato Salad with pancetta; Berry Salad with spring mix, goat cheese and honey lavender vinaigrette; and Chicory Salad composed of radicchio, Belgium endive, frisee, hibiscus poached pears, fennel and candied walnuts. For lighter fare, there are Antipasto Cups, Tea Sandwiches, Deviled Eggs and Tropical Fruit Cups. For heartier appetites: Carved Garlic and Herb Prime Rib with Madeira au jus, Citrus Glazed Ham with Myers’s Rum sauce and orange marmalade, Lamb Roulade served with cherry balsamic sauce and Spatchcock Chicken with tangerine fennel honey. Also, Entrees will showcase Crusted Salmon with citrus beurre blanc; Short Ribs with vegetable accompaniments; Zucchini Involtini; Tarragon Pesto Pasta with asparagus, blistered tomato and pine nuts; and a Parmesan Wheel highlighted by arborio rice and a medley of creamy mushrooms. Especially for the Kids on Easter, all their favorites including Mac & Cheese, Chicken Tenders, Uncrustables, French Fries, Fruit Cups and Crudité.
