Valentine Prix Fixe Dinner at CAVA

A delightful four-course innovative California-focused menu will be served at Renaissance Esmeralda Resort & Spa’s signature restaurant CAVA for Valentine’s Day — complete with splendid views of the Santa Rosa Mountains, complimentary glass of sparkling wine and a lovers’ parting gift. To begin, the choice of Appetizers is Purple Haze Mousse and Beets in phyllo dough with lemon pearls and hazelnut vinaigrette or Crab and Lobster with crème fraîche, tomato jam and basil chive oil. First Course selections are Tomato Bisque with confit potato, fire-roasted fennel and brioche or Cheese Croquette with citrus, candied walnuts and white honey balsamic. Then the Second Course offers Braise composed of short rib, parsnip, blistered tomato, smoked cavolo nero and basil mashed potato or Lobster and Dumplings served with pine nuts, arugula, parmesan, roasted tomato and red pepper cream or Vegetarian Stuffed Carrot with black rice cake, romanesco, pistachio, spinach and herb yogurt. The sweet ending features Dessert options of Vegan Cheesecake with candied cashews, cashew cream, fresh berries and vegan chocolate or Red Velvet Macaroons accompanied by raspberry mousse with raspberry sauce and white chocolate.
