With stunning views of the Santa Rosa Mountains, Renaissance Esmeralda Resort & Spa’s signature restaurant CAVA is a local desert favorite for celebrating families and friends as well as for Indian Wells destination travelers from all over the globe. This festive Thanksgiving banquet buffet offers Cream of Parsnip Soup with Spanish chorizo for a starter to be enjoyed with selections from the Cornucopia Bread Display of sourdough, baguettes, house made focaccia, lavash and grissini, Assorted Cured Meats and California Cheeses. The Seafood Display features snow crab legs, crab claws, Kumamoto oysters, poached shrimp, mussels and clams. The Sushi Bar is a draw with Assorted Rolls and Nigiri prepared fresh by the sushi chef, and guests can choose to enjoy Pumpkin Risotto with pancetta, Three Cheese tortellini with roasted tomato and creamy sundried tomato pesto and Rigatoni with lamb ragout. Refreshing Salads are Chicory Salad with endive, radicchio, frisée, pomegranate and marigold flower confetti; Beet Salad with orange supremes and whipped brie; and Roasted Acorn Squash composed of baby gem, candied pepitas, pancetta and baby heirloom tomato. The Carving Station offers wonderful choices of traditional seasonal favorites of Herb Roasted Turkey accompanied by sage gravy and cranberry sauce, Honey Citrus Glazed Ham with whole grain dijonaise and braised red cabbage, Prime Rib with rosemary jus and Salmon En Croute with sweet pea puree and roasted asparagus. There is a wide variety of Vegetables, including roasted garlic mashed potatoes, roasted sweet potato with marshmallow and honey, green bean casserole, maple bacon Brussels sprouts, roasted fall vegetables, date stuffing and more. For a sweet ending to be very thankful for, guests are treated to a cornucopia of Desserts by Elvia — pumpkin, apple, pecan, strawberry and rhubarb pies, pumpkin cognac cheesecake, carrot cake, apple galette, ginger snap cookies, red velvet cake, chocolate fudge cake, ginger panna cotta and other delicacies. There are also Crepes, Cotton Candy and Waffle Cookie Stations.

The Special Friendship Gourmet Menu in Cava Restaurant features a Mushroom Mousse in Puff Pastry Gift. Then there’s a choice of Brussels Chop Salad with fennel, slivered almonds, dried cranberries, purple haze and maple vinaigrette or Carpaccio composed of butternut squash, beets, whipped burrata, pomegranate, arugula and walnuts. The entrée choices are Chicken Roulade with stuffing, parsnip puree, haricots verts, heirloom carrots, almonds, red watercress and cranberry jus or Lamb Porterhouse with acorn squash, braised endive, blackberries in port, blueberry gastrique and frisée or Branzino served with pumpkin risotto, apple relish, walnuts and crispy sage. Lovely Dessert options are Cognac Pumpkin Cheesecake with pumpkin spices, and creme anglaise or Hazelnut Sponge Cake with hazelnut mousse and vanilla sauce.
