Vespera Resort on Pismo Beach, an Autograph Collection Hotel, along the city’s iconic Central California Coast boardwalk, reveres Mother Earth and all her grandeur — the mighty Pacific Ocean, native and introduced flora and fauna and her abundance of local fisheries and ranches. To honor Earth Day on Friday, April 22, the resort has planned two tributes — Lights Out Dining and Stargazing — for resort guests and those nearby.

On Earth Day, Vespera Resort’s signature restaurant will host Lights Out Dining for romantic and contemplative dining by candlelight on the breezy patio setting with the commanding sound of waves crashing from the ocean. Chef Frank Barajas’ coastal heritage inspired menu features the most pristine ingredients available along the Central coast — resulting in comfortable, creative dishes that showcase the quality and flavor of the products he uses, and diners can start with a fine handcrafted cocktail or a local beer. Choice selections on the menu include Baja Shrimp Cocktail, Seaside Chowder, Herb Roasted Jidori Chicken, Vespera Chopped Salad, Grilled Halibut, Blueberry Lemon Tart and more. Stargazing at Vespera Resort is a special activity that will take place on the resort’s Stargazing Lawn beginning at 8 p.m. on Earth Day, Friday, April 22. Student members of California Polytechnic State University’s Astronomical Society will visit with at least two telescopes, and Vespera Resort guests can bring along the collapsible telescopes and a stargazing map provided in each guest room or bring one from home. This is an activity tailored to all ages and loved by participant “astronomers” who want to learn more about the night sky. The resort has a particular interest in astronomy since “vespera” signifies the evening star, paying tribute to the Chumash First Nations who inhabited the Central Coast and used the stars to navigate across the Santa Barbara Channel.
